Method
- Preheat your oven to 400°F (350°F fan/gas 6). Lightly oil a baking tray and place the chicken breasts on it. Season the chicken, then wrap each breast with two rashers of bacon. Bake for 20-25 minutes, or until the chicken is cooked through.
- While the chicken is in the oven, heat 1 tbsp of oil in a skillet over medium heat. Add the sliced red onion and sauté until golden brown and softened, then remove from the skillet and set aside.
- Place the chopped potatoes in a large pot of boiling water and cook for 10-15 minutes until tender. In a separate small pot, bring water to a boil. Add the runner beans and carrots, cooking them one at a time for 8-10 minutes each until they are tender but still have a slight bite.
- Drain the cooked potatoes and return them to their pot. Add the milk and soft cheese.
- Mash the potatoes until smooth, then stir in the sautéed onions.
- Once the chicken is cooked, remove it from the oven. Pour the BBQ sauce over the chicken and sprinkle with grated parmesan. Return to the oven for 2 minutes, just until the cheese is melted and bubbly. Serve the chicken with the mashed potatoes, carrots, and runner beans.
💡 Tips
- For extra flavor, you can add a pinch of smoked paprika to the chicken before wrapping it in bacon.
- Ensure the bacon is wrapped tightly around the chicken to keep it moist during cooking.
