This cranberry marshmallow salad is a classic holiday side dish that's incredibly easy to make. The combination of sweet marshmallows, tart cranberries, and tropical pineapple creates a refreshing and indulgent treat.

Method

  1. In a large bowl, combine the miniature marshmallows with the whipped cream. Stir gently until evenly coated.
  2. Cover the bowl with plastic wrap and refrigerate for 2 hours, allowing the marshmallows to soften and absorb the cream.
  3. In a separate small bowl, mix together the ground cranberries and the sugar. Stir well to combine.
  4. Cover the cranberry mixture and also refrigerate for 2 hours, so the sugar can draw out the cranberries' juices and soften them.
  5. After both mixtures have chilled, remove them from the refrigerator. In a large serving bowl, combine the marshmallow-cream mixture with the cranberry mixture.
  6. Add the drained crushed pineapple and the chopped pecans. Fold everything together gently until all ingredients are evenly distributed.
  7. For best results, cover the salad and let it rest in the refrigerator overnight before serving. This allows the flavors to meld and the texture to become perfectly creamy.
  8. Serve chilled as a side dish or dessert. Garnish with extra pecans or a dollop of whipped cream if desired.

💡 Tips

  • For a lighter version, use light whipped cream and reduce the sugar to 1/2 cup.
  • Make sure the cranberries are finely ground so they blend smoothly into the salad.
  • This salad keeps well in the refrigerator for up to 3 days.
