Creamy Chicken Burrito Bake

These easy chicken burritos are filled with a creamy, spiced chicken mixture and baked with melted cheddar on top. Ready in just 30 minutes, they're perfect for meal prep or a quick dinner.

This recipe combines tender chicken thighs with a rich cream cheese sauce, all wrapped in flour tortillas and baked to perfection. The filling is packed with smoky paprika, garlic, and a touch of heat from jalapeño and Cajun seasoning, creating a flavorful base.

Topped with melted cheddar cheese, these burritos are crispy on the edges and gooey inside. They are freezer-friendly and can be made ahead, making them a versatile option for busy weeknights or entertaining.

Method

  1. In a bowl, combine the chicken pieces with salt, smoked paprika, garlic powder, black pepper, and Cajun seasoning, tossing to coat evenly.
  2. Heat a pan over medium heat with a little oil. Add the seasoned chicken and cook for 3-4 minutes, stirring occasionally. Then add the minced garlic and diced onion, cooking for another minute until fragrant.
  3. Add the diced capsicum, sweet corn, and chopped jalapeño. Stir and cook for 3-4 minutes until the vegetables soften and the chicken is fully cooked.
  4. Reduce the heat. Add the cream cheese and lemon juice, stirring until the cheese melts and forms a thick sauce coating everything. If the mixture seems thin, let it simmer for an extra minute to thicken. Taste, adjust salt if needed, and remove from heat.
  5. Lay a tortilla flat. Spoon about 1/3 cup (100g) of the chicken mixture into the center.
  6. Top with 1/4 cup (30g) of shredded cheese. Fold the left and right sides in tightly. Bring the bottom flap up over the filling, tuck it under slightly, and roll upwards to seal. Repeat with all 8 tortillas.
  7. Place the rolls seam-side down on a baking sheet to keep them closed.
  8. Place half a slice of cheddar cheese on top of each roll. Bake for 10-15 minutes until the tortillas are slightly toasted on the edges and the cheese is fully melted.
  9. Let them cool for a minute before serving warm with your dipping sauce.

💡 Tips

  • For extra crispiness, brush the tortillas with a little oil before baking.
  • You can substitute chicken thighs with chicken breast if preferred.
  • These burritos freeze well; wrap individually and reheat in the oven.
