Greek-Style Cheesy Bread Rolls with Feta and Gouda

Soft, homemade bread rolls filled with a creamy blend of feta, gouda, and cream cheese, baked until golden and topped with sesame seeds. Perfect for sharing, meal prep, or alongside soups and salads.

These Greek-inspired bread rolls combine the tangy richness of feta with the smooth, nutty flavor of gouda, all wrapped in a fluffy homemade dough. The cream cheese makes the filling extra luscious, while the sesame seed coating adds a subtle crunch.

Perfect for parties, as a snack, or even for meal prep, these rolls are versatile and delicious. They can be served warm or at room temperature, and they pair beautifully with a fresh salad or a bowl of soup.

Method

  1. In the bowl of a stand mixer fitted with the dough hook, combine the lukewarm water, sugar, instant yeast, and 1/4 cup of the flour. Whisk together and let sit for 8 minutes until the yeast activates and a frothy layer forms on top.
  2. In a separate bowl, whisk together the remaining 4 cups flour and the salt. Add this to the yeast mixture along with the olive oil.
  3. Knead on low speed for 10 minutes until the dough is smooth and elastic.
  4. Lightly grease a large bowl with olive oil. Transfer the dough into the bowl, cover with plastic wrap, and set aside to rise until doubled in volume, about 1 hour.
  5. Meanwhile, prepare the filling: in a bowl, combine the crumbled feta, shredded gouda, dried mint, dried oregano, and freshly cracked black pepper. Mix until smooth and creamy.
  6. Preheat the oven to 400°F. Line two baking sheets with parchment paper and sprinkle lightly with semolina, if using.
  7. Turn the dough out onto a clean work surface. Divide it into 10 equal pieces. Flatten each piece into an oval. Place about 2 heaping tablespoons of the filling in the center. Roll up into a bread roll, pinching the seams to seal.
  8. For a light topping: place the rolls seam-side down on the prepared baking sheets. Brush the tops with water and sprinkle generously with sesame seeds.
  9. For full sesame coating: brush each roll all over with water. Spread sesame seeds in a shallow dish. Roll each dough piece in the seeds until completely coated, then place on the baking sheets.
  10. Bake for 20–25 minutes, until golden brown all around. Let cool slightly before serving.

💡 Tips

  • If you don’t have a stand mixer, you can knead the dough by hand for about 12–15 minutes until smooth and elastic.
  • For a stronger sesame flavor, toast the sesame seeds lightly in a dry pan before coating the rolls.
  • These rolls freeze well; let them cool completely, then wrap tightly and freeze for up to 3 months.
