Making your own granola is surprisingly simple and lets you control exactly what goes into it. This recipe combines oats, coconut, wheat germ, and a mix of nuts and seeds, all tossed in a maple-syrup and vanilla dressing, then baked low and slow until perfectly crunchy.
Once cooled, you can stir in your favorite dried fruits—raisins, cranberries, apricots, or cherries—for a burst of natural sweetness. Store it in an airtight container for weeks, or package it in pretty bags for a thoughtful homemade gift.
Ingredients
Converted amounts are rounded.
Method
- Preheat the oven to 250°F. Lightly grease two large rimmed baking sheets or line them with parchment paper.
- In a very large bowl, combine the oats, coconut, wheat germ, nuts, and seeds. Mix well.
- In a separate bowl, whisk together the oil, salt, maple syrup, and vanilla.
- Pour the wet ingredients over the dry mixture and stir until everything is thoroughly coated.
- Spread the granola evenly on the prepared baking sheets, pressing it down gently.
- Bake for about 90 minutes, stirring every 15 minutes with a heatproof spatula. Move the granola from the edges toward the center to ensure even browning, and swap the baking sheets' positions (top to bottom, bottom to top) each time you stir.
- When the granola is medium golden brown, remove from the oven and let it cool completely on the pans.
- Transfer the cooled granola to a large bowl and mix in the dried fruit.
- Store in an airtight container at room temperature for several weeks, or freeze for longer storage. You can also portion it into decorative bags for gifting.
💡 Tips
- For extra crunch, toast the nuts and seeds briefly in a dry skillet before adding them to the mix.
- If you prefer a clumpier granola, press the mixture down firmly before baking and avoid stirring too often.
- Feel free to substitute the dried fruit with your favorite combination, such as chopped dates or dried blueberries.
