This dish brings together two beloved elements: chicken thighs that turn wonderfully crisp on the outside while staying tender and juicy inside, and a velvety cauliflower mash that mimics the comfort of mashed potatoes with far fewer carbs. The marinade—a punchy mix of lemon, vinegar, oregano, and thyme—infuses the meat with bright Mediterranean flavor.
It's a straightforward meal that works for busy weeknights yet feels special enough for a weekend table. The mash, enriched with butter and Parmesan, is the perfect creamy counterpoint to the tangy, roasted chicken. Serve it straight from the tray for a rustic, satisfying dinner.

Method
- In a large bowl or a resealable plastic bag, whisk together the olive oil, lemon juice, red wine vinegar, oregano, thyme, garlic, salt, and pepper. Add the chicken thighs and turn them well to coat every piece with the marinade.
- Cover the bowl or seal the bag and refrigerate for at least 3 hours, turning the chicken occasionally if you can.
- Preheat the oven to 400°F. Line a large baking sheet (or two regular ones) with parchment paper.
- Take the chicken thighs out of the marinade and arrange them on the prepared baking sheet(s), skin side up.
- Roast for 30–35 minutes, until the internal temperature reaches 165°F and the skin is golden and crisp. Let them rest for 5–10 minutes before serving.
- While the chicken roasts, cut the cauliflower into florets.
- Bring a large pot of lightly salted water to a boil over high heat. Add the cauliflower and cook for just a couple of minutes—until the florets are tender but still have a bit of bite. Drain in a colander and discard the water.
- Transfer the cauliflower to a food processor. Add the Parmesan, butter, and a pinch of salt and pepper. Pulse until smooth and creamy. (An immersion blender works too.)
- Taste and adjust the seasoning with more salt, pepper, or a drizzle of olive oil or extra butter if you like.
💡 Tips
- For extra crispiness, pat the chicken thighs dry with paper towels before marinating.
- If you're short on time, you can skip the marinating and just season the chicken well—it will still be delicious, though less tangy.
- The cauliflower mash can be made ahead and reheated gently with a splash of milk or cream.
