In the Netherlands, gelatin-set puddings are a beloved way to end a meal, offering a light yet satisfying sweetness. This version gets a festive twist from Maraschino liqueur, which adds a subtle cherry-almond note that pairs beautifully with the fresh fruit and crunchy biscuits.
The pudding is set overnight, allowing the flavors to meld and deepen. It's a make-ahead dessert that's perfect for entertaining, as it can be prepared a day in advance and simply unmolded when ready to serve.

Method
- Soak the gelatin leaves in cold water for about 5 minutes until soft.
- In a heatproof bowl set over a pot of simmering water (double boiler), whisk the egg, egg yolks, and half of the sugar until the mixture thickens and becomes pale.
- Squeeze the excess water from the gelatin and gently warm it in a small saucepan with the water over low heat, stirring until fully dissolved.
- Remove the egg mixture from the heat and stir in the dissolved gelatin, rum, and Maraschino liqueur. Let it cool to room temperature.
- In a separate bowl, whip the cream with the remaining sugar until soft peaks form.
- Fold the whipped cream into the cooled egg mixture gently until well combined.
- Fold in the chopped fruit and the chopped bitterkoekjes (or amaretti biscuits).
- Rinse a pudding mold with cold water and shake out the excess (do not dry). Spoon the mixture into the mold.
- Refrigerate the pudding for at least 24 hours to set and allow the flavors to develop.
- To unmold, dip the mold briefly in hot water, place a serving plate upside down over the mold, and invert both together. Lift off the mold.
- Garnish with fresh fruit and extra whipped cream if desired. Serve chilled.
💡 Tips
- Use a mix of fruits like berries, peaches, or grapes for a colorful result.
- Ensure the gelatin is fully dissolved to avoid lumps in the pudding.
- For a non-alcoholic version, replace the rum and Maraschino with cherry juice.
