Perfect Base Muffin Recipe (Any Flavor)

This versatile muffin base creates tender, bakery-style muffins every time. Use any add-ins you like, and enjoy them fresh or straight from the freezer.

This is the only muffin recipe you'll ever need. It's a simple, foolproof base that works with any flavor combination you can imagine—from blueberry and chocolate chip to banana nut or even savory options. The secret is a two-temperature baking method: a quick blast of high heat creates a tall, domed top, then a gentler finish bakes the center perfectly.

The batter comes together quickly, and the optional crumb topping adds a lovely crunchy, buttery layer. Muffins stay moist for days and freeze beautifully, so you can always have a batch on hand for breakfast, snacks, or dessert.

    Method

    1. Preheat the oven to 425°F. Spray a 12-count muffin pan with nonstick spray or line with paper liners.
    2. Make the crumb topping: In a medium bowl, stir together the brown sugar, granulated sugar, and cinnamon. Mix in the melted butter. Gently work in the flour with a fork until large crumbles form; do not overmix. Set aside or refrigerate.
    3. In a large bowl, whisk the flour, baking powder, baking soda, salt, and cinnamon (if using) until combined.
    4. In another large bowl, beat the softened butter, granulated sugar, and brown sugar with an electric mixer on high speed until smooth and creamy, about 3 minutes. Scrape the bowl as needed. Add the sour cream, eggs, and vanilla; beat on medium for 1 minute, then on high until combined. Scrape again.
    5. Pour the dry ingredients into the wet mixture and beat on low speed until just combined. Add the milk and continue on low until incorporated. Fold in your chosen add-ins. The batter should be thick.
    6. Spoon the batter into the prepared muffin cups, filling them all the way to the top. If using crumb topping, spoon it on and press lightly so it sticks. Otherwise, sprinkle the tops with coarse sugar.
    7. Bake for 5 minutes at 425°F. Without removing the muffins, reduce the oven temperature to 350°F and bake for an additional 15–18 minutes, or until a toothpick inserted in the center comes out clean. Total baking time is about 22–23 minutes.
    8. Let the muffins cool in the pan on a wire rack for 10 minutes, then transfer them to the rack to cool completely. Store tightly covered at room temperature for up to 5 days or in the refrigerator for up to 1 week.

    💡 Tips

    • For best results, make sure all refrigerated ingredients (butter, sour cream, eggs, milk) are at room temperature before starting.
    • The crumb topping can be made ahead and stored in the fridge for up to 3 days.
    • To freeze: wrap cooled muffins individually in plastic wrap and place in a freezer bag. Thaw at room temperature or microwave briefly.
