This cocktail is like a tropical vacation in a glass, blending sweet pineapple with creamy coconut and a zesty lime kick. The Tajín rim adds a savory-spicy contrast that makes every sip exciting.
Perfect for summer parties, barbecues, or just a lazy afternoon, this drink is easy to whip up in a blender. Serve it as a slushy margarita or pipe it into glasses for a fun, frozen-yogurt-style swirl.
Ingredients
Converted amounts are rounded.
Method
- Spread some Tajín on a small plate. Rub the rims of two glasses with the lime wedge, then dip each rim into the Tajín, turning to coat evenly.
- In a blender, combine the frozen pineapple, tequila, coconut milk, lime juice, and sugar. Blend until smooth and creamy.
- Pour the mixture into the prepared glasses. Alternatively, transfer it to a piping bag fitted with a 3/4-inch round tip and swirl it into the glasses like frozen yogurt. Garnish with pineapple wedges.
💡 Tips
- For a stronger coconut flavor, use full-fat coconut milk.
- Adjust the sweetness by adding more or less sugar.
- If you don't have Tajín, use chili powder mixed with a pinch of salt.
