Air-Fryer Mediterranean Veg with Zingy Tomato Dressing

Charred, tender Mediterranean vegetables with a punchy tomato dressing and garlicky yogurt, all made effortlessly in the air fryer.

This recipe celebrates the vibrant flavors of the Mediterranean, using the air fryer to achieve that perfect char and tenderness in vegetables. The combination of sweet roasted onions, jammy lemon, and a fresh tomato dressing creates a dish that's both simple and impressive.

Serve it as a hearty vegetarian main with flatbreads, or as a stunning side dish. The garlicky yogurt adds a cool, creamy contrast, while the feta brings a salty finish that ties everything together beautifully.

Method

  1. Peel the onions and cut them in half along with the lemon. Remove the shelf from the small air-fryer drawer, place the onions, lemon halves, and the whole unpeeled garlic bulb inside. Cook for 40 minutes at 400°F, or until soft and sweet, removing the lemon halves after 15 minutes.
  2. Halve the aubergine and courgette lengthways. Score the skin side of each in a criss-cross pattern at 1/2 cm intervals. Place them flesh side down in the large air-fryer drawer and cook for 30 minutes at 400°F, or until golden and tender.
  3. For the dressing, pour 2 tablespoons of extra virgin olive oil into a shallow bowl. Squeeze in the juice from one of the jammy lemon halves using tongs. Halve the tomato and finely grate the flesh into the bowl, discarding the skin. Add the chilli flakes, then squash, destone, and tear in the olives. Mix well and season to taste.
  4. Remove the garlic bulb from the small air-fryer drawer with tongs. Squeeze the soft roasted garlic flesh into a small bowl, discarding the skins. Mash it with the yoghurt, 1/2 tablespoon of extra virgin olive oil, and a small squeeze from the other jammy lemon half (reserve this half for serving). Season to taste.
  5. Tip the cooked aubergine and courgette into the tomato dressing. Pick in the mint and parsley leaves, then toss everything together. Remove the onions from the air fryer, pull them apart into petals, and scatter over the top. Crumble the feta over the dish.
  6. Serve with the reserved jammy lemon half for squeezing over, and the garlicky yoghurt on the side. This is excellent with flatbreads for dunking.

💡 Tips

  • If you don't have an air fryer, you can roast the vegetables in an oven preheated to 400°F for similar results.
  • For extra flavor, add a pinch of smoked paprika to the tomato dressing.
  • Serve with warm flatbreads or pita for a complete meal.
