This dish brings together the earthy richness of roasted eggplant with a warmly spiced lamb filling, creating a satisfying meal that feels both rustic and elegant. The eggplant halves are first baked until tender, then loaded with a fragrant mixture of ground lamb, onions, garlic, and tomatoes, seasoned with cloves, cinnamon, and cardamom.
Perfect for a family dinner or a special gathering, this all-in-one bake is simple to assemble and delivers layers of flavor. Toasted pine nuts add a delightful crunch, while fresh parsley brightens each serving. Serve it straight from the oven for the best experience.
Method
- Preheat the oven to 425°F.
- Arrange the eggplant halves cut side up in a large baking dish. Brush with 2 tablespoons of the oil and sprinkle with some of the salt. Bake until the skin is browned and the flesh is soft, about 20 minutes.
- Meanwhile, in a large cast-iron or non-stick skillet, heat the remaining 1 tablespoon of oil. Add the onions and garlic, season with salt, and sauté over medium heat, stirring often, until softened.
- Add the ground lamb and the spices (cloves, cinnamon, cardamom, red pepper flakes, black pepper). Brown, breaking up the meat with a wooden spoon, until cooked through, about 5-10 minutes.
- Stir in the diced tomatoes and the pine nuts (if using), reserving 1 tablespoon of pine nuts for topping.
- Reduce the oven temperature to 350°F.
- Cut the eggplant halves down the middle lengthwise, being careful not to tear the skin on the bottom. Spoon the lamb mixture over the eggplants in the baking dish.
- Cover the dish with foil and bake for 30 minutes.
- Garnish with parsley and the reserved pine nuts, and serve immediately.
💡 Tips
- If you prefer a milder spice, reduce the red pepper flakes to 1/4 teaspoon.
- To toast pine nuts, place them in a dry skillet over medium heat and stir until golden, about 2-3 minutes.
- For a keto-friendly version, simply omit the pine nuts.
