Method

  1. Prepare the artichokes by cleaning them and cutting each one into four pieces.
  2. Heat a little olive oil in a skillet over medium heat. Sauté the leeks and scallions for 3 minutes until softened.
  3. Add the artichoke pieces to the skillet and sauté for another 4-5 minutes.
  4. Stir in the chopped carrot and the dill (or fennel) stems. Pour in 1 cup of water, cover the skillet, and let it simmer on low heat for 10 minutes, allowing the artichokes to absorb the liquid and become tender.
  5. Once the liquid has evaporated, remove the skillet from the heat. Stir in the chopped dill (or fennel) leaves.
  6. Lightly grease a small oven-safe dish with butter.
  7. Arrange the cubed bread in a single layer at the bottom of the prepared dish, ensuring there are no gaps.
  8. Sprinkle the crumbled anthotyro cheese over the bread layer. Then, spread the sautéed artichoke and leek mixture evenly on top.
  9. In a separate bowl, whisk together the eggs, cream cheese, and milk until well combined.
  10. Season the egg mixture with salt and pepper to taste. Pour this mixture evenly over the ingredients in the baking dish.
  11. Sprinkle the grated graviera cheese over the top. Bake in a preheated oven at 350°F with fan assist for about 20 minutes, or until the surface is golden brown.
  12. Let the bake rest for 5 minutes after removing it from the oven. Cut into squares and serve.

💡 Tips

  • For a richer flavor, you can add a pinch of nutmeg to the egg mixture.
  • If using fresh artichokes, make sure to rub them with lemon to prevent browning while you prepare them.
