Method
- Prepare the chicken marinade: In a large bowl, whisk together olive oil, oregano, smoked paprika, cumin, honey, lemon juice, minced garlic, salt, and pepper. Set aside.
- Prepare the chicken: Place chicken thighs between two sheets of plastic wrap and pound them with a meat mallet or the bottom of a heavy pan to an even thickness of about 1.5 cm.
- Marinate the chicken: Add the pounded chicken thighs to the bowl with the marinade. Toss to ensure every piece is well coated. Cover the bowl and refrigerate for at least 2 hours, or preferably overnight.
- Preheat the oven to 400°F.
- Assemble the gyro: Thread the marinated chicken pieces onto metal skewers, packing them tightly together. Intersperse the chicken pieces with the onion and red pepper rings.
- Roast the gyro: Place the skewers in a roasting pan and bake for 1 to 1.5 hours, or until the internal temperature reaches 165°F.
- Rest and slice: Remove the gyro from the oven and let it rest for about 8 minutes. Then, carefully carve thin slices from the skewer with a sharp knife.
- Make the tzatziki sauce: While the gyro roasts, prepare the tzatziki. Peel and grate the cucumber into a large bowl. Season with salt and pepper and let it sit for 10 minutes.
- Drain the cucumber: Squeeze the grated cucumber firmly in a clean kitchen towel to remove as much excess liquid as possible.
- Blend the tzatziki: In a blender, combine the olive oil and minced garlic and blend until smooth. Transfer the blended mixture to a bowl. Add the drained cucumber, yogurt, red wine vinegar, and a pinch of salt. Stir or blend until all ingredients are well combined.
- Chill the tzatziki: Cover the tzatziki and refrigerate until ready to serve. It's best served cold.
- Prepare the pita breads: Preheat your oven to 475°F. Brush both sides of the pita breads lightly with olive oil and sprinkle with salt and oregano.
- Warm the pitas: Place the seasoned pita breads on an oven rack or an overturned baking sheet. Bake for 2-3 minutes, just until they are warm and slightly puffed.
- Assemble and serve: Spread a generous amount of tzatziki sauce onto each warm pita. Top with sliced chicken gyro, red onion slices, tomato slices, and optional fried potatoes or lettuce. Fold or wrap the pita to serve.
💡 Tips
- For a more intense flavor, marinate the chicken overnight.
- Ensure the skewers are packed tightly to prevent the chicken from drying out during roasting.
- If you don't have metal skewers, you can roast the chicken pieces directly on a baking sheet lined with parchment paper.
