These crispy broccoli fritters are packed with flavor and vegetables, making them a hit with both kids and adults. They are baked instead of fried, which cuts down on oil while keeping them perfectly golden and crunchy.
Serve them as a light main dish or a tasty side, with your favorite dip like ketchup, Greek yogurt, or sour cream.
Ingredients
Converted amounts are rounded.
Method
- Preheat the oven to 400°F. Line two baking sheets with parchment paper and set aside.
- Cut the broccoli into florets. Discard the tough part of the stem and chop the tender part finely. Place broccoli and stem in a food processor and pulse until finely chopped. Add the egg, onion, garlic, flour, and Parmesan. Pulse again a few times until well combined, about 5 seconds total. Stir in the salt and pepper.
- Form 8-10 fritters on the prepared baking sheets, making sure they are not touching. Lightly spray the tops with olive oil spray.
- Bake for 12-15 minutes per side, until golden and crispy. Alternatively, pan-fry in a nonstick skillet over medium heat until golden on both sides.
- Let the fritters cool slightly before serving. Serve with ketchup, Greek yogurt, or fat-free sour cream.
💡 Tips
- For extra flavor, add a pinch of red pepper flakes.
- If the mixture seems too wet, add a little more flour.
- You can also air-fry these at 375°F for 10-12 minutes, flipping halfway.
