Balsamic Lemon Chicken Thighs in a Sweet-Savory Pan Sauce

A quick and tangy skillet dinner featuring bone-in chicken thighs glazed with a balsamic lemon sauce and soft caramelized onions.

When time is tight but you still crave something satisfying, these lemon-balsamic chicken thighs deliver big flavor with minimal effort. The pan sauce comes together in minutes — tangy from vinegar and lemon, slightly sweet from brown sugar, and finished with a pat of butter for richness.

The boneless-skinless thighs stay tender as they simmer in the reduced sauce, while the red onion adds a mellow sweetness that pairs perfectly with the bright citrus notes. Serve this over rice, mashed potatoes, or crusty bread to soak up every last drop.

Method

  1. Heat 1 tablespoon of oil in a large skillet over medium-high heat. Season the chicken thighs all over with garlic powder and 1/4 teaspoon each of salt and pepper. Place them in the hot pan and cook, turning once, until deep golden brown on both sides, about 6 to 8 minutes total. Transfer the chicken to a plate and keep warm.
  2. Lower the heat to medium. Add the remaining 1 tablespoon of oil and the sliced red onion to the pan. Cook, stirring now and then, until the onion softens and takes on some color, roughly 3 minutes.
  3. In a small bowl, whisk together the chicken broth, balsamic vinegar, lemon zest, lemon juice, brown sugar, thyme, and the remaining 1/4 teaspoon each of salt and pepper. Pour the mixture into the pan and cook for 30 seconds, scraping up any browned bits stuck to the bottom. Return the chicken to the pan along with any juices that have collected on the plate.
  4. Partially cover the skillet and let it cook, turning the chicken occasionally, until the liquid has reduced and a thermometer inserted into the thickest part of a thigh (away from the bone) reads 165°F, about 10 to 15 minutes. Transfer the chicken to a serving platter. Stir the butter into the pan sauce until melted, then spoon it over the chicken.

💡 Tips

  • If you prefer, use boneless, skinless chicken thighs; reduce cooking time by about 5 minutes.
  • The sauce is fairly tangy — adjust the brown sugar or lemon juice to your taste.
  • Serve with rice, mashed potatoes, or crusty bread to soak up the delicious pan sauce.
