Method

  1. Preheat the oven to 350°F. Line a large baking sheet with parchment paper or a silicone baking mat; set aside.
  2. In a medium bowl, whisk together the flour, baking soda, cinnamon, and salt. Set aside.
  3. In a large bowl, using a stand mixer or hand mixer, beat the butter on medium speed for about 30 seconds. Add the brown sugar and granulated sugar, and beat until smooth, about 1 minute, scraping down the sides of the bowl as needed.
  4. Add the egg and vanilla extract, and mix until well combined. Turn off the mixer, add the dry ingredients, and mix on low speed just until incorporated. Do not overmix.
  5. Stir in the oats and butterscotch chips with a spatula or wooden spoon.
  6. Using a cookie scoop or a spoon, scoop the dough into balls and place them on the prepared baking sheet, spacing them about 2 inches (5 cm) apart.
  7. Bake for 10 to 12 minutes, until the edges are lightly golden but the centers are still soft. They will continue to set as they cool. Remove from the oven and immediately sprinkle with flaky sea salt. Let cool on the baking sheet for 3 minutes, then transfer to a wire rack to cool completely.

💡 Tips

  • For a softer cookie, slightly underbake and let them rest on the hot baking sheet.
  • If you don't have butterscotch chips, you can substitute with chocolate chips or chopped nuts.
  • Store in an airtight container at room temperature for up to 5 days.
