This egg bake brings together the best of a savory bread pudding and a hearty brunch casserole. Cubed ciabatta soaks up a creamy egg custard flavored with Dijon mustard and everything bagel seasoning, while layers of fresh asparagus and salty prosciutto add texture and flavor.
Gruyère cheese melts into a golden, bubbly topping, making this dish perfect for Easter brunch, Mother's Day, or any holiday gathering. Letting it rest after baking allows the layers to set for clean slices.
Ingredients
Converted amounts are rounded.
Method
- Preheat the oven to 325°F. Lightly grease a 9x13-inch (approx. 23x33 cm) baking dish with cooking spray.
- Spread half of the cubed ciabatta (4 cups) evenly in the prepared dish. Arrange the chopped asparagus, torn prosciutto, and minced shallot over the bread, then top with the remaining 4 cups of bread cubes.
- Whisk together the eggs, Dijon mustard, and everything bagel seasoning in a large bowl until well combined. Pour in the whole milk and whisk until smooth and fully incorporated. Pour the egg mixture evenly over the layers in the dish. Gently press down with the back of a spoon to ensure all bread pieces are soaked.
- Place the dish in the preheated oven and bake, uncovered, for 40 minutes. Remove the dish from the oven and sprinkle the shredded Gruyère cheese evenly over the top. Return to the oven and bake until the cheese is melted and golden, and a knife inserted into the center comes out clean, about 10 to 15 minutes extra.
- Let the casserole stand at room temperature for 20 minutes before slicing and serving. Garnish with a light sprinkle of additional everything bagel seasoning.
💡 Tips
- For easy trimming, hold each asparagus spear near the bottom and bend; it will snap naturally at the woody part—discard the tough end.
- If you don't have everything bagel seasoning, substitute with a mixture of sesame seeds, poppy seeds, dried garlic, dried onion, and salt.
- The casserole can be assembled the night before, covered, and refrigerated; add 10 minutes to the initial baking time if starting cold.
