This moussaka is the epitome of Greek comfort food: silky eggplant, a deeply savory meat filling with hints of cinnamon and oregano, all crowned with a golden bechamel crust. It's a dish that takes a little time but rewards you with layers of flavor that meld together beautifully.
Start by salting the eggplant to draw out bitterness, then bake until tender. While that's happening, simmer the meat sauce until thick and aromatic, and prepare the bechamel – a simple roux-based sauce enriched with cheese and eggs. Assemble, bake, and let it rest before slicing for perfect, clean portions.

Method
- Slice the eggplants into 0.75 cm rounds. Layer them in a colander, sprinkling each layer with salt. Let them sweat for 30 minutes to draw out bitterness.
- Meanwhile, preheat the oven to 450°F. Pat the eggplant slices dry thoroughly with paper towels to remove excess salt. Arrange them on parchment-lined baking sheets (you may need 3 trays), brush lightly with olive oil, and bake for 15–20 minutes until softened and lightly browned. Set aside to cool slightly.
- For the meat sauce, heat 1 tablespoon of olive oil in a large skillet or pot over high heat. Sauté the diced onion and minced garlic for 2 minutes until fragrant.
- Add the ground beef or lamb and cook, breaking it up with a spoon, until it changes from pink to brown.
- Pour in the red wine (if using) and cook for 1½ minutes until the alcohol smell evaporates. Then add the crushed tomatoes, tomato paste, beef broth, crumbled bouillon cube, bay leaves, sugar, oregano, cinnamon, and salt. Stir well, bring to a simmer, then lower the heat to medium-low and cook for 15 minutes until the sauce thickens. Remove the bay leaves.
- While the meat sauce simmers, make the bechamel. In a saucepan, melt the butter over medium heat. Add the flour and cook, stirring constantly, for 1 minute to make a roux.
- Slowly pour in the milk while whisking continuously to avoid lumps. Keep stirring for 3–5 minutes until the sauce thickens and coats the back of a spoon.
- Remove the pan from the heat. Whisk in the grated parmesan (or kefalotiri), nutmeg, Vegeta or stock powder, and pepper. Let it cool for 5 minutes, then whisk in the egg and egg yolk until smooth. Cover and set aside.
- Lower the oven temperature to 350°F. Arrange half of the baked eggplant slices in the bottom of a baking dish (about 26 cm / 9 inches). Spread all of the meat sauce evenly over the eggplant.
- Top with the remaining eggplant slices, then pour the bechamel sauce over the top, spreading it gently. Sprinkle with panko breadcrumbs.
- Bake for 30–40 minutes until the top is golden brown and the filling is bubbling. Let the moussaka rest for 10 minutes before slicing and serving.
💡 Tips
- For the best texture, don't skip salting the eggplant – it removes bitterness and helps them soften.
- You can prepare the meat sauce and bechamel a day ahead; assemble and bake just before serving.
- Let the moussaka rest after baking; it sets the layers and makes slicing much easier.
