A weeknight classic: mushrooms browned hard in butter and olive oil, a splash of white wine, fresh cream and parmesan, all tossed with the pasta and a little of its cooking water for a glossy sauce.
Method
- Bring a large pot of well-salted water to the boil and cook the pasta 1 minute less than the packet says. Reserve 1 cup of the cooking water and drain.
- Meanwhile heat the olive oil and half the butter in a large frying pan over high heat. Add the mushrooms in batches and cook without stirring for 2–3 minutes, then stir until golden. Season with salt and pepper.
- Lower the heat to medium, add the remaining butter and the onion and cook for 3 minutes until soft. Add the garlic and thyme and cook for 1 minute until fragrant.
- Pour in the wine and let it bubble until almost evaporated.
- Add the cream and simmer gently for 2–3 minutes until slightly thickened.
- Add the pasta and the parmesan to the pan and toss, adding pasta water a little at a time until the sauce is glossy and coats the pasta.
- Taste for salt and pepper, sprinkle with parsley and serve immediately with extra parmesan.
💡 Tips
- Do not crowd the pan: brown the mushrooms in two batches so they sear instead of steaming.
- Keep a cup of pasta water; add it little by little until the sauce coats the pasta.
- Swap the wine for a little lemon juice if you prefer.
