Method
- In a bowl, combine the chicken with the soy sauce, rice vinegar, peanut oil, smashed garlic, smashed ginger, and a handful of cilantro. Season with salt and pepper, stir well, cover, and refrigerate for 1 to 2 hours.
- Heat vegetable or peanut oil in a wok or deep skillet to 375°F. Dip the marinated chicken pieces into buttermilk, then coat them in flour. Fry in batches until golden brown and crispy, about 4 to 5 minutes per batch. Drain on paper towels.
- In a separate wok or large skillet, heat 2 tablespoons of oil over high heat. Add the dried chilies, scallions, garlic, ginger, and orange zest. Stir-fry for 1 minute until fragrant.
- Pour in the soy sauce, chicken stock, rice vinegar, and honey. Bring to a boil. Mix the cornstarch with 2 tablespoons of cold water to make a slurry, then add it to the sauce in two additions, stirring, until the sauce thickens.
- Add the fried chicken pieces to the sauce and cook for about 2 minutes, until heated through. Garnish with scallions and cilantro leaves.
- Boil the noodles according to package instructions. Drain, rinse under cold water, and pat dry with a towel.
- Heat canola oil in a large non-stick skillet over high heat. Add the noodles, spread them evenly, and fry until golden and crispy, about 8 minutes, turning once. Break them up with a spatula near the end. Transfer to a paper towel-lined plate and season with salt.
- In a small bowl, whisk together the vegetable broth, oyster sauce, soy sauce, cornstarch, and sugar. Set aside.
- Wipe out the skillet, heat it over high heat, and add a little oil. Stir-fry the ginger, garlic, and scallion for about 30 seconds until fragrant.
- Add the onion, celery, mushrooms, and mixed vegetables. Stir-fry for about 2 minutes until crisp-tender. Add the water chestnuts and push everything to the sides to create a well in the center.
- Pour the broth mixture into the well, bring to a boil, and stir to coat the vegetables. Stir in the bean sprouts and remove from heat. Season generously with pepper.
- Transfer the vegetable mixture to a warm platter, top with the fried noodles, and serve with extra soy sauce at the table.
💡 Tips
- For extra crispiness, double-coat the chicken: dip in buttermilk, then flour, then buttermilk, then flour again.
- If you can't find Thai chilies, use 2 dried red chilies or 1 teaspoon of red pepper flakes.
- Prepare all ingredients before you start frying; the stir-fry goes quickly.
