Crispy Spring Rolls with Homemade Sweet Chili Sauce

Crispy spring rolls filled with fresh vegetables and rice noodles, served with a refreshing homemade sweet chili sauce.

These spring rolls are a delightful appetizer or snack, bursting with crunchy vegetables and delicate rice noodles. The filling is quickly stir-fried to preserve its freshness and wrapped in rice paper for a light, crispy bite.

The accompanying sweet chili sauce is made from scratch with roasted peppers, apple, and a hint of spice. It's perfectly balanced between sweet, tangy, and mildly hot, and it keeps well in the fridge for weeks.

    Converted amounts are rounded.

    Method

    1. Place the rice noodles in a bowl and cover with boiling water. Let them soak for about 5 minutes until softened.
    2. Drain the noodles and use kitchen scissors to cut them into 3–4 cm pieces.
    3. Heat a wok or deep skillet over high heat and add the oil, ensuring the surface is well coated.
    4. Add the scallions, garlic, bell pepper, carrot, and cabbage and stir-fry for 2–3 minutes.
    5. Add the ginger, drained noodles, bean sprouts (if using), white balsamic vinegar, and soy sauce. Stir-fry over high heat for 1–2 minutes, then season with a pinch of pepper.
    6. Transfer the mixture to a bowl and let it cool completely.
    7. Dissolve the cornstarch in a little water to make a paste for sealing the wrappers.
    8. Take one rice paper wrapper and place it diagonally in front of you, with one corner pointing toward you.
    9. Place a small amount of filling lengthwise in the center. Fold the bottom corner over the filling, then fold in the two side corners and roll tightly, sealing the final corner with a dab of cornstarch paste.
    10. Repeat with the remaining wrappers and filling. At this point, you can refrigerate the rolls for a day or freeze them for longer storage.
    11. Heat plenty of vegetable oil in a deep pan and deep-fry the rolls in batches for 3–4 minutes, until golden and crispy.
    12. Drain on paper towels and serve hot with the sweet chili sauce.

    💡 Tips

    • For a quicker version, use store-bought sweet chili sauce.
    • Make sure the filling is completely cool before rolling to prevent the wrappers from tearing.
    • If deep-frying, maintain the oil temperature at 170–350°F for best results.
