Ingredients
Converted amounts are rounded.
Method
- In a large bowl, beat the butter, sugars, and salt until light and creamy.
- Add the egg and vanilla, and beat until combined. Gently fold in the flour until a smooth dough forms.
- Divide the dough in half, shape each half into a disk, wrap in plastic wrap, and refrigerate for at least 1 hour.
- Preheat the oven to 400°F. Grease or line two baking sheets with parchment paper.
- On a lightly floured surface, roll out one disk of dough to 1/4-inch thickness.
- If using a springerle pin: Dust the dough and the pin lightly with flour. Roll the pin over the dough, pressing firmly to leave a clear imprint. Cut the cookies apart along the lines.
- If using a springerle mold: Dust the dough and the mold lightly with flour. Press the mold firmly into the dough, then remove and cut around the design with a knife or a fluted pastry wheel.
- Transfer the cookies to the prepared baking sheets. Bake for 10 to 12 minutes, until the edges are lightly golden.
- Remove from the oven and let cool completely on the baking sheets.
- Store the shortbread in an airtight container for up to a week, or freeze for longer storage. The flavor improves over time.
💡 Tips
- For a crisper texture, roll the dough slightly thinner than 1/4 inch.
- If the dough becomes too soft while rolling, chill it again for a few minutes.
- These cookies make great gifts; store them in a decorative tin.
