When strawberries are at their peak, simplicity is key. This pie lets the berries shine, with just a touch of cooking to create a sliceable filling. The crust is made in the microwave, so you don't even need to turn on the oven.
Choose from several easy crust variations to showcase your beautiful berries. Serve warm or chilled, topped with whipped cream if you like.

Method
- For the crust: Put the cold butter in a microwave-safe 9-inch pie pan (stoneware or glass). Microwave until the butter is melted.
- In a bowl, whisk together the flour, both sugars, and salt. Pour the dry mixture over the melted butter and stir until no dry spots remain.
- Press the dough evenly over the bottom and up the sides of the pan with your fingers, forming a crimped edge if you like.
- Microwave the crust for 2 minutes; it should feel hot. Microwave for another 30 seconds to 1 minute to set the crust. If the edges slide down slightly, push them back up.
- For the filling: Wash the strawberries, trim off the tops, and cut them into 1/2- to 3/4-inch pieces. For medium-to-large berries, each berry will yield about 8 pieces. Set aside 3/4 of the berries.
- Place the remaining berries (about 1 1/2 cups chopped) in a saucepan and crush them lightly with a potato masher or a large spoon.
- Combine the crushed berries with the sugar, Pie Filling Enhancer (or cornstarch), and water. Cook over medium heat until the mixture begins to thicken. Remove from heat and stir in the juice and salt.
- Fold the cooked berry mixture into the uncooked berries.
- Spread the filling over the prepared crust. Serve the pie warm, or chill for a few hours to set the filling before serving.
- Top with whipped cream if desired.
💡 Tips
- For a crispier crust, you can bake it in a preheated 375°F oven for 10-12 minutes instead of microwaving.
- If using frozen strawberries, thaw and drain them well before using.
- Serve with a dollop of whipped cream or a scoop of vanilla ice cream.
