These quick pickled jalapeños are a fantastic way to add a zesty kick to tacos, sandwiches, salads, or nachos. The refrigerator method keeps them perfectly crisp, and the touch of sugar balances the heat beautifully.
With just a handful of ingredients and about 15 minutes of hands-on time, you can have a jar of these vibrant, tangy peppers ready to enjoy. They're a staple in our kitchen, and we're sure they'll become one in yours too.
Method
- Sterilize a glass jar or airtight container by running it through the dishwasher.
- Slice the jalapeños into rings and pack them tightly into the sterilized jar.
- In a small saucepan, combine the vinegar, water, sugar, and salt. Bring the mixture to a boil over medium-high heat, stirring occasionally to dissolve the sugar and salt.
- Carefully pour the hot brine over the sliced jalapeños, making sure they are fully submerged. Seal the jar with its lid.
- Let the jar cool to room temperature, about 15 minutes.
- Refrigerate for at least 1 week before serving to allow the flavors to develop. The pickles will keep in the fridge for up to 2 months.
💡 Tips
- For milder pickles, remove the seeds and membranes before slicing.
- Use a non-reactive pot (stainless steel or enamel) to avoid any metallic taste.
- If you prefer a sweeter pickle, use the full 4 tablespoons of sugar.
