This recipe turns a box of funfetti cake mix into adorable, no-fuss treats that are perfect for parties or snacking. With just four ingredients, you can create dozens of colorful, crunchy-on-the-outside, soft-on-the-inside cake balls.
Feel free to experiment with different cake and frosting combinations to make these your own. The process is simple: bake the cake, crumble it, mix with frosting, shape into balls, chill, dip in melted candy coating, and decorate.
Ingredients
Converted amounts are rounded.
Method
- Preheat the oven according to the cake mix package directions. Grease a 13x9-inch baking pan. Prepare and bake the funfetti cake mix as directed on the package. Let the cake cool completely on a wire rack. For extra flavor, you can add 1 teaspoon of vanilla or almond extract to the batter before baking.
- Crumble the cooled cake into a large bowl. Add the entire can of funfetti frosting and mix thoroughly until the mixture is evenly combined and holds together.
- With slightly damp hands (to prevent sticking), roll the mixture into 1-1/4-inch balls. Place the balls on a baking sheet lined with parchment paper. Freeze for at least 2 hours, or refrigerate for at least 3 hours, until firm.
- In a microwave-safe bowl, melt the white candy coating according to the package directions, heating in short bursts and stirring until smooth. Work in small batches to keep the coating at the right consistency; if it thickens, reheat briefly.
- Dip each chilled cake ball into the melted coating, letting any excess drip off. Immediately sprinkle with rainbow jimmies or nonpareils. Place the coated balls on a parchment-lined surface and let stand at room temperature until the coating is completely set.
💡 Tips
- For easier rolling, keep your hands slightly damp.
- If the candy coating thickens while dipping, reheat it in the microwave for 10-15 seconds.
- You can use any flavor of cake mix and frosting to create different combinations.
