This simple Asian-inspired stir-fry highlights the peppery, tender leaves of mizuna. The combination of garlic, fish sauce, and lemon creates a bright, savory dressing that coats the greens perfectly.
Mizuna cooks very quickly, so it's important to work fast over high heat. The result is a slightly wilted but still crisp texture, making it an ideal side for grilled meats or rice dishes.
Ingredients
Converted amounts are rounded.
Method
- Wash the mizuna and drain well. It's fine if the leaves are still slightly damp. Roughly chop into 1-inch (2.5 cm) pieces and set aside.
- Place a wide, shallow pan or a wok over high heat. Add the 2 tablespoons of oil and heat until shimmering.
- Add the crushed garlic and stir for about 5 seconds, until fragrant.
- Add the chopped mizuna to the pan and sauté for 1 minute, stirring constantly. The greens should be softened but still crisp.
- Add the fish sauce and salt, and stir to distribute evenly. Remove from heat.
- Squeeze the lemon wedge over the greens and sprinkle with freshly ground pepper. Serve warm or at room temperature.
💡 Tips
- For extra heat, add a pinch of red pepper flakes along with the garlic.
- If you can't find mizuna, try baby spinach or arugula as a substitute.
- Serve alongside grilled chicken, fish, or steamed rice for a complete meal.
