These little golden pastries, known as kouroudakia, are a delightful cross between a biscuit and a bread roll. Their texture is wonderfully crisp on the outside yet soft and fluffy inside, making them irresistible.
They are delicious on their own, but you can also fill them with a savory feta and kasseri cheese mixture to create mini cheese pies. Perfect for lunchboxes, parties, or as a snack with your afternoon coffee or tea.

Converted amounts are rounded.
Method
- Melt the butter and set it aside to cool.
- In a large bowl, mix the melted butter with the yogurt, corn oil, salt, and vinegar.
- Add the flour and baking powder, and quickly knead with your hands until a smooth dough forms. Do not over-knead, as the oil will come to the surface.
- Cover the dough with plastic wrap and refrigerate for 15 minutes.
- If making the filling, crumble the feta and mix it with the grated kasseri, the egg, and a little pepper.
- Preheat the oven to 340°F and line a baking sheet with parchment paper.
- Divide the dough into 20 pieces and shape each into an egg shape. If not filling, flatten slightly with your palm and place on the baking sheet. If filling, press into discs, place a spoonful of filling in the center, fold the dough over to enclose, and pinch the edges to seal.
- Brush the pastries with the beaten egg and sprinkle with sesame seeds.
- Bake for 25-30 minutes, until golden brown.
💡 Tips
- For a lighter texture, do not overwork the dough.
- If you prefer, you can skip the filling and enjoy them plain.
- Store in an airtight container for up to 3 days.
