Golden Skillet Zucchini with Sweet Balsamic Glaze

A quick and easy side dish of tender zucchini rounds sautéed in olive oil, finished with a homemade sweet balsamic glaze and a sprinkle of sesame and dried herbs.

This skillet zucchini is my go-to when I need a last-minute side that feels a bit special. The balsamic glaze is surprisingly simple to make at home and turns everyday zucchini into something glossy and delicious.

The natural sweetness of the glaze pairs beautifully with the earthy zucchini, while the sesame seeds add a subtle crunch. Serve it warm or at room temperature—it's versatile enough for weeknight dinners or a casual gathering.

Method

  1. In a small saucepan, combine the balsamic vinegar and brown sugar. Place over medium-high heat and bring to a boil, stirring occasionally until the sugar dissolves.
  2. Reduce the heat to medium-low and let the mixture simmer gently for about 20 minutes, until it has reduced and thickened slightly. Remove from heat and allow it to cool for 10 minutes; it will continue to thicken as it cools.
  3. While the glaze is simmering, heat the olive oil in a large skillet over medium-high heat until it shimmers but does not smoke.
  4. Add the zucchini rounds in a single layer (work in batches if needed) and season with salt, pepper, and paprika. Sauté for 7 to 10 minutes, tossing occasionally, until the zucchini are tender and have developed golden-brown spots on both sides.
  5. Using a slotted spoon, transfer the sautéed zucchini to a serving platter.
  6. Drizzle the warm balsamic glaze over the zucchini.
  7. Sprinkle with sesame seeds and dried mint or parsley flakes.
  8. Serve warm or at room temperature.

💡 Tips

  • To save time, you can use a store-bought balsamic glaze instead of making your own.
  • Make sure the zucchini are dry before sautéing to avoid splattering.
  • For extra flavor, add a pinch of red pepper flakes along with the paprika.
