This isn't your average BLT. We've taken the classic combination of crispy bacon, juicy tomatoes, and fresh lettuce and elevated it with creamy avocado slices and a tangy Greek yogurt spread. The result is a sandwich that's both familiar and exciting, perfect for a quick lunch or a satisfying dinner.
The key to this recipe is using high-quality ingredients and a simple technique. We bake the bacon in the oven for perfectly crispy results without the mess, and we toast the bread until it's golden and sturdy enough to hold all the delicious fillings. A drizzle of red wine vinegar on the tomatoes adds a bright, acidic note that balances the richness of the bacon and avocado.

Method
- Preheat the oven to 400°F. For easy cleanup, line a baking sheet with foil and place a wire rack on top. Lightly coat the rack with nonstick spray, then arrange the bacon slices in a single layer on the rack.
- Bake the bacon for 15 to 25 minutes, until crispy. Transfer to a paper towel-lined plate and pat dry to remove excess fat.
- Arrange the tomato slices in a single layer on a plate. Drizzle with the red wine vinegar and season lightly with salt and pepper.
- When the bacon is almost done, place the bread slices on a baking sheet (or directly on the oven rack) and toast for 5 minutes. Flip and toast for 1 more minute, until evenly golden brown.
- Place two slices of toasted bread on a cutting board or plate. Spread each with 1 tablespoon of yogurt.
- Layer the lettuce on top of the yogurt. Then add the tomato slices, shaking off any excess juice before placing them on the lettuce.
- Top with 3 slices of bacon per sandwich, tearing the bacon in half if needed to fit.
- Add the sliced avocado and sprinkle with a pinch of salt and pepper. Spread the remaining two slices of toasted bread each with 1 tablespoon of yogurt, then place them yogurt-side down on top of the avocado. Cut each sandwich in half and serve immediately.
💡 Tips
- For extra flavor, use a smoked or peppered bacon.
- If you don't have a wire rack, you can bake the bacon directly on the foil-lined baking sheet, but it may be less crispy.
- To keep the bread from getting soggy, pat the tomato slices dry with a paper towel before assembling.
