Ingredients
Converted amounts are rounded.
Method
- Cut the chicken into bite-sized pieces and place them in a zip-top bag.
- In a small bowl or measuring cup, whisk together the canola oil, lime juice and zest, chili powder, cumin, garlic, jalapeño, and salt.
- Pour the marinade over the chicken, seal the bag, and gently squish it so the chicken is coated. Place the bag in a baking dish to catch any drips, then refrigerate for 30 minutes or overnight.
- When ready to cook, preheat your grill to medium-high. If using wooden skewers, soak them in water for at least 20 minutes beforehand.
- Cut the bell peppers and onion into 3/4-inch chunks. Thread the chicken, peppers, and onion onto skewers, alternating them.
- Lightly oil the grill grates. Place the skewers on the grill, cover, and cook until the chicken is fully cooked and no longer pink, about 6 to 8 minutes, turning once or twice for even cooking.
- Remove the skewers to a serving plate, sprinkle with cilantro and a few squeezes of fresh lime juice. Serve warm, with salsa, sour cream, or guacamole as desired.
💡 Tips
- For extra flavor, marinate the chicken overnight.
- If using metal skewers, no soaking is needed.
- Serve with warm tortillas for a true fajita experience.
