Method
- Place all the meat pieces in a large pot, layered. Cover with water by about 2 cm and heat over medium heat until simmering, which may take 45-60 minutes. As the water heats, skim off any foam that rises, continuing for 15 minutes until no more foam forms.
- Once the water is at a gentle simmer, add the white wine, bouquet garni, coarse salt, peppercorns, garlic cloves, and whole onions. Simmer uncovered over medium-low heat for 2 to 2.5 hours, skimming occasionally.
- Add the vegetables and sausage to the pot. Continue to simmer for another 45 minutes, or until the vegetables are tender. Remove the pot from the heat. Using a slotted spoon, transfer the meats, sausages, and vegetables to a large platter.
- Strain the broth into a clean pot. Add the ice cubes and let them sit for 2-3 seconds, then remove them immediately with a slotted spoon. This process helps to remove excess fat that will adhere to the ice.
- If desired, remove the bones from the meats and arrange them attractively on the platter, or simply cut into serving portions. Adjust seasoning in the broth if needed. Ladle the broth into deep bowls.
- Serve immediately, accompanied by the meats and vegetables. Offer lemon juice at the table for guests to add to their bowls as desired.
💡 Tips
- For an even richer flavor, you can brown the meat pieces before adding water in step 1.
- Ensure the broth is skimmed thoroughly in the first steps for a clearer, less fatty soup.
