Method
- Crush the garlic and let it sit while you prepare the other ingredients.
- In a large pot, melt the fat over medium heat. Add the diced onion and cook until softened, about 3–4 minutes.
- Add the sliced peppers and sauté for another 4–5 minutes, until they are slightly limp or browned. Stir in the garlic, salt, cumin, oregano, and taco seasoning, and cook for 1 minute until fragrant.
- Add the cooked beef or chicken and stir for 1 minute to combine.
- Pour in the diced tomatoes with their juice, the optional tomato paste or tomato sauce, the cooked brown rice, the sliced onion (the second onion), and the broth. Start with 4 cups of broth for a very thick soup, or use up to 8 cups for a thinner consistency.
- Bring the soup to a boil, then remove from heat. It’s ready to serve.
- Serve hot with your choice of toppings: sour cream, guacamole or avocado, chopped red onion, sliced sweet white onion, shredded cheese, jalapeños, tortilla chips, a squeeze of lime, and fresh cilantro.
💡 Tips
- For a more intense fajita flavor, char the peppers and onions under the broiler or on a grill before adding them to the soup.
- If you don't have taco seasoning, substitute with a mix of chili powder, cumin, paprika, garlic powder, and a pinch of cayenne.
- Leftover soup thickens as it sits; thin with extra broth when reheating.
