This homemade takoyaki sauce comes together in just 5 minutes with a few pantry staples. It mimics the beloved Otafuku brand, with a perfect balance of sweetness, tang, and umami.
Use it generously over freshly made takoyaki for an authentic street-food experience. It also keeps well in the fridge or freezer, so you can have it on hand whenever the craving strikes.
Method
- Gather all the ingredients: Worcestershire sauce, mentsuyu, ketchup, and sugar.
- In a small bowl, combine 3 tablespoons Worcestershire sauce, 1 teaspoon mentsuyu, ½ teaspoon ketchup, and ¾ teaspoon sugar.
- Whisk until the sugar is completely dissolved. Taste and adjust the seasoning to your liking—if your ketchup is sweeter, reduce the sugar; if your Worcestershire sauce is tangier, add a pinch more sugar.
- Use the sauce immediately drizzled over takoyaki (grilled octopus balls).
- Store any leftovers in an airtight container in the refrigerator for up to 2–3 weeks, or freeze for up to 3–4 months. Thaw in the fridge before using.
💡 Tips
- If you can't find mentsuyu, substitute with 1 teaspoon soy sauce mixed with ¼ teaspoon dashi powder.
- For a milder sauce, use Japanese Worcestershire sauce like Bull-dog; for a tangier kick, use Lea & Perrins.
- Adjust the sugar based on your ketchup brand—sweeter ketchup needs less sugar.
