These grilled chicken thighs are a summer staple – easy to prepare and packed with flavor. The key is patting the thighs dry and letting them marinate briefly so the seasoning sticks and the skin gets beautifully crispy.
Grilled over medium-high heat, then finished with a lid on, they stay juicy inside while the outside gets a smoky char. A quick brush of barbecue sauce in the last minutes adds a glossy, sticky finish if you like.
Ingredients

Method
- Pat the chicken thighs dry with paper towels and place them in a large bowl. Add the avocado oil, BBQ seasoning, and salt (if using). Rub the mixture evenly all over the thighs, making sure both sides are coated. Let them sit at room temperature for 15–20 minutes to marinate.
- Preheat your grill to medium-high heat (about 375–400°F / 190–400°F).
- Oil the grill grates, then place the chicken thighs skin side down on the hot grill. Cook for 7 minutes without moving.
- Reduce the heat to medium, cover the grill, and continue cooking for another 12–15 minutes, or until the internal temperature reaches 165°F.
- During the last few minutes, brush the thighs with barbecue sauce if you want a thicker glaze.
- Transfer the cooked chicken to a platter and let them rest for a few minutes before serving.
💡 Tips
- For extra crispy skin, let the thighs marinate uncovered in the fridge for 30 minutes before grilling.
- If using a charcoal grill, bank the coals to one side for indirect heat after the initial sear.
- Let the chicken rest at least 5 minutes so the juices redistribute.
