This Tuscan-inspired gnocchi is the ultimate quick-fix dinner. The gnocchi are first seared in the oil from the sun-dried tomatoes, giving them a golden, slightly crispy exterior, then simmered in a luscious cream sauce with garlic, shallots, and Italian herbs.
Fresh spinach wilts into the sauce, while sun-dried tomato strips add bursts of tangy sweetness. Finished with grated Parmesan and fresh basil, every bite is creamy, savory, and utterly satisfying.
Ingredients
Converted amounts are rounded.
Method
- Heat a large skillet over medium heat with the reserved 2 tablespoons of oil from the sun-dried tomatoes. Add the dry gnocchi in a single layer and let them sear undisturbed for about 1 minute, until they turn golden on one side.
- Add the butter, chopped shallot, and minced garlic. Sauté for about 1½ minutes, until the shallot is soft and fragrant.
- Pour in the heavy cream and chicken broth. Sprinkle with the dried Italian herbs, salt, and pepper. Stir and bring to a gentle simmer. Cook for 2–3 minutes, until the sauce thickens slightly.
- Stir in the grated Parmesan until melted and the sauce is creamy. Add the sun-dried tomato strips and cook for 1 minute, stirring occasionally.
- Add the fresh spinach and cook just until wilted, about 1 minute. Remove from heat, sprinkle with fresh basil, and serve immediately.
💡 Tips
- For extra flavor, use the oil from the sun-dried tomato jar instead of regular olive oil.
- If the sauce becomes too thick, add a splash of chicken broth or cream to loosen it.
- Serve with crusty bread to soak up every last bit of the creamy sauce.
