This recipe turns humble cauliflower into a star main dish. Thick slices are brushed with olive oil, seasoned, and roasted until golden and tender.
The herb sauce, made with mint, parsley, nuts, and a hint of spice, adds a burst of flavor. It's a light, vegan, and dairy-free meal that's perfect for any day of the week.
Method
- Preheat the oven to 400°F (fan-forced) and line a medium shallow baking tray with parchment paper.
- Brush the cauliflower steaks thoroughly with all the olive oil and season with salt and pepper on both sides.
- Arrange them on the tray and roast for about 15 minutes, until they start to brown.
- Flip them over and continue roasting for another 8-10 minutes, until tender.
- Meanwhile, in a bowl, combine all the sauce ingredients and season with salt and pepper.
- Divide the cauliflower among plates and drizzle with the herb sauce.
- Serve the roasted cauliflower steaks with a fluffy pilaf with toasted hazelnuts.
💡 Tips
- For extra flavor, you can also grill the cauliflower steaks on a barbecue or grill pan.
- If you prefer a milder sauce, reduce the amount of red pepper flakes.
- The herb sauce can be made ahead and stored in the refrigerator for up to 2 days.
