Ingredients
Converted amounts are rounded.
Method
- Place the pickled beets and toasted walnuts in a food processor. Pulse until they are very finely chopped.
- Add the goat cheese and the reserved pickling liquid. Process until smooth, scraping down the sides of the bowl as needed, for 1 to 2 minutes.
- Spoon the dip into a small serving bowl. Top with additional chopped toasted walnuts. Serve immediately with cut-up vegetables.
💡 Tips
- If you can't find garlic-and-herb goat cheese, use plain goat cheese and add a small minced garlic clove and a pinch of dried herbs.
- For a smoother dip, let the goat cheese come fully to room temperature before blending.
- The dip can be made a day ahead and refrigerated; stir well before serving.
