Pink Grapefruit Yogurt Cake with Syrup and Glaze

A moist, tender yogurt cake infused with the bright flavor of pink grapefruit, finished with a sweet syrup and a tangy glaze.

This cake is a delightful twist on the classic yogurt cake, using pink grapefruit zest and juice to add a citrusy brightness. The syrup keeps it incredibly moist, while the glaze adds a pretty, glossy finish.

It's simple to make with everyday ingredients, perfect for brunch, tea time, or any occasion that calls for a light, flavorful dessert. The tangy grapefruit pairs beautifully with the subtle sweetness of the cake.

Method

  1. Preheat the oven to 350°F. Spray a 9-inch round cake pan with cooking spray and dust lightly with flour. Set aside.
  2. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. In a small bowl, rub the grapefruit zest into the sugar with your fingers until fragrant. In a large bowl, mix the yogurt, sugar-zest mixture, and eggs with a spoon or spatula until smooth. Stir in the vanilla.
  4. Add the flour mixture to the wet ingredients and mix just until combined.
  5. Pour in the oil and mix well; it may take a minute for the oil to incorporate fully.
  6. Pour the batter into the prepared pan. Bake for 25-30 minutes, until a toothpick inserted in the center comes out clean and the cake springs back when lightly touched.
  7. Cool the cake on a wire rack for about 15 minutes, then remove from the pan. While it cools, make the syrup and glaze.
  8. For the syrup, combine the grapefruit juice and sugar in a small saucepan. Whisk over medium heat until the sugar dissolves.
  9. For the glaze, whisk together the powdered sugar and 2-3 tablespoons of grapefruit juice in a medium bowl. Adjust consistency with more juice or sugar if needed.
  10. Poke holes all over the cake with a toothpick. Spoon the syrup over the cake and let it soak in. Once the cake reaches room temperature, drizzle the glaze over the top.

💡 Tips

  • Use a good-quality Greek yogurt for the best texture.
  • If you don't have pink grapefruit, regular grapefruit works too.
  • The cake tastes even better the next day, as the syrup has fully soaked in.
