This vegan Caesar dressing comes together in a flash using everyday pantry staples. The hummus gives it a creamy base while capers and their brine deliver that classic tangy, savory flavor.
Feel free to adjust the garlic and lemon to your taste. A touch of maple syrup can balance the saltiness if needed. This dressing is wonderful on kale, romaine, or arugula, and pairs beautifully with roasted Brussels sprouts or potatoes.
Method
- In a small bowl, combine the hummus, spicy mustard, lemon zest, lemon juice, minced capers, caper brine, minced garlic, salt, and pepper. Whisk thoroughly until smooth.
- If desired, add the olive oil for extra creaminess and whisk again. Gradually add a little hot water, a tablespoon at a time, while whisking until the dressing reaches a pourable consistency.
- Taste and adjust the seasoning: add more salt, pepper, lemon juice, or garlic if needed. If the dressing tastes too salty or briny, stir in the maple syrup to balance it.
- Use the dressing immediately, or transfer to an airtight container and refrigerate for up to 5–7 days. It thickens when chilled; stir in a splash of water before using if needed.
- This dressing is excellent on kale, romaine, or arugula. For a classic Caesar salad, top with vegan parmesan. It also works wonderfully on roasted vegetables like Brussels sprouts and potatoes.
💡 Tips
- For a smoother dressing, use a mini food processor instead of whisking.
- If you don't have spicy mustard, substitute with Dijon mustard and a pinch of cayenne.
- The dressing thickens as it sits; thin it with a little water or lemon juice before serving.
