Fruit compote is one of those simple, versatile sauces that can transform a plain dessert into something special. With just fruit, a touch of sweetener, and a pinch of salt, you get a thick, jammy sauce bursting with natural flavor.
You can use any fruit you have on hand—fresh or frozen—and adjust the sweetness to your taste. It’s ready in about 15 minutes and keeps well in the fridge for up to 10 days.
Ingredients
Converted amounts are rounded.
Method
- Prepare the fruit: If using fresh strawberries or peaches, slice them thinly. Small berries like blueberries or raspberries can stay whole. Frozen fruit can go straight into the pot without thawing or slicing.
- In a medium saucepan, combine the fruit, sweetener, and a dash of salt. Bring to a boil over medium-high heat, stirring occasionally. This takes about 5 minutes for fresh fruit or 10 minutes for frozen fruit.
- Once boiling, reduce the heat to medium. If you prefer a smoother compote, mash the fruit with a potato masher or fork to your desired consistency. Continue simmering, stirring often, until the mixture has reduced by about half—roughly 5 minutes.
- Remove from heat. Taste and add more sweetener if needed. For a smoother texture, mash further. Let the compote cool for a few minutes before serving.
- Store any leftover compote in an airtight container in the refrigerator for up to 10 days. Let it cool completely before covering.
💡 Tips
- For extra flavor, add a vanilla bean, cinnamon stick, or a splash of lemon juice while simmering.
- If you like a thicker compote, simmer a few minutes longer until it reaches your desired consistency.
- This compote also works well as a topping for cheesecake, oatmeal, or even as a filling for crepes.
