This dessert is all about letting the fruit shine. Choose a mix of plums, greengages, and mirabelles for a beautiful medley of colors and flavors, or stick to one variety—the result will be equally delicious.
The roasting process concentrates the natural sweetness of the fruit, while the star anise adds a subtle licorice note and the maple syrup brings a warm, caramelized touch. Serve warm or chilled with a dollop of mascarpone or Greek yogurt.
Ingredients
Converted amounts are rounded.
Method
- Preheat the oven to 350°F (fan 325°F, gas mark 4). Arrange the plums in a single layer in a 1-liter gratin dish.
- Pour the orange juice over the plums, tuck the star anise among them, and drizzle with the maple syrup. Gently stir to combine.
- Bake for 30–35 minutes, until the fruit is soft but still holds its shape. Do not overbake.
- Serve warm or cold, with a spoonful of mascarpone or Greek yogurt on the side. The roasted plums can be stored in the fridge for up to 3 days.
💡 Tips
- For a more intense flavor, let the plums marinate in the orange juice and maple syrup for 30 minutes before baking.
- If using only one type of plum, choose ripe but firm ones so they hold their shape during roasting.
- The syrup left in the dish is delicious drizzled over ice cream or yogurt.
