Method

  1. Pulse the 3/4 cup pecans in a food processor until finely chopped. Transfer to a shallow dish and set aside. To the food processor, add the cream cheese, shredded gouda, sun-dried tomatoes, milk, parsley, Worcestershire sauce, garlic powder, salt, and a few grinds of black pepper. Pulse until the mixture is fully combined and almost smooth.
  2. Set aside 1 teaspoon of the cheese mixture in a small bowl and refrigerate. With wet hands, shape the remaining mixture into a ball. Roll the cheese ball in the chopped pecans to coat thoroughly. Refrigerate until firm, at least 1 hour or up to overnight.
  3. Transfer the cheese ball to a serving platter. Insert the cheese straws into the back of the ball in a fan shape for the first row of tail feathers. In front of the straws, insert the oval buttery crackers, pressing them in so they are lower than the straws. For the third row, insert 7 pieces of the mini oval crackers (cut-side down) in front of the buttery crackers. Insert a mini oval cracker half on each side of the ball (cut-side in) for wings; eat or reserve the remaining half.
  4. To make the turkey neck and head, halve the bell pepper lengthwise and cut it into thick strips. Cut a 4-inch piece from the curved end of one strip and insert it into the top of the cheese ball. Reserve remaining pepper for another use or to serve.
  5. For the beak, trim the reserved piece of sun-dried tomato into a small triangle and attach it to the pepper head using the reserved cheese mixture as glue. Use the cheese mixture to adhere the peppercorn eyes. Tuck the 2 pecan halves under the cheese ball as feet.
  6. Serve the turkey cheese ball with crackers and cut-up vegetables.

💡 Tips

  • For a smoother texture, ensure the cream cheese and gouda are at room temperature before mixing.
  • If the cheese mixture is too sticky, wet your hands slightly when shaping the ball.
  • You can prepare the cheese ball up to 2 days in advance and decorate it just before serving.
