This berry compote is incredibly versatile and comes together with just five ingredients. You can make it on the stovetop for a classic simmered version, or roast the berries in the oven for a deeper, slightly caramelized flavor.
Use it as a topping for yogurt, oatmeal, pancakes, ice cream, or cheesecake. It also makes a lovely spread on toast or a filling for crepes. The compote keeps well in the fridge for up to 10 days.

Method
- Stovetop method: Place the strawberries, blueberries, and raspberries in a medium saucepan. Add the sugar and lime juice, and toss gently to combine.
- Bring the mixture to a boil over medium-high heat, stirring occasionally. Let it boil for about 5 minutes, until the sugar dissolves.
- Reduce the heat to low and let the berries simmer for 15–20 minutes, stirring often, until the fruit softens and the compote reduces by about half.
- Remove from heat. If you prefer a smoother compote, mash the fruit with a fork or potato masher. Taste and adjust sweetness if needed (add a little more sugar or honey, stirring well).
- Let the compote cool for 15–30 minutes before serving. It will thicken further as it cools.
- Oven method: Preheat the oven to 375°F.
- In a large bowl, combine the chopped strawberries, blueberries, and raspberries with the sugar and lime juice. Toss to coat evenly.
- Spread the fruit mixture in a single layer in a large baking dish or a rimmed sheet pan.
- Roast for 30–45 minutes, stirring every 10–15 minutes, until the berries have collapsed and released their juices.
- Let the roasted berries cool for 15–20 minutes before serving. Store leftovers in the refrigerator.
💡 Tips
- For a smoother compote, mash the fruit more thoroughly after cooking.
- Adjust sweetness to your taste; you can use honey or maple syrup instead of extra sugar.
- Store the compote in an airtight container in the refrigerator for up to 10 days.
