Ingredients
Converted amounts are rounded.
Method
- In a large slow cooker insert, combine the chicken pieces, chopped onion, chicken broth, heavy cream, garlic powder, and oregano. Season generously with salt and pepper. Cover and cook on high for 3 to 3.5 hours, or until the chicken is thoroughly cooked.
- Add the broccoli florets and egg noodles to the slow cooker. Stir everything together, cover, and continue cooking on high for another 20 to 30 minutes, until the noodles are tender and the broccoli is cooked through.
- Stir in the butter until melted. Top the casserole evenly with the shredded cheddar and grated Parmesan cheeses. Cover again and cook for about 2 minutes, just until the cheese is fully melted and gooey.
- Serve the creamy chicken and broccoli casserole hot, garnished with crushed Ritz crackers, fresh parsley, and a sprinkle of red pepper flakes.
💡 Tips
- For a richer flavor, you can use chicken thighs instead of breasts.
- If you don't have Ritz crackers, any buttery cracker or even breadcrumbs can be used for the topping.
