This is the kind of pasta you make on a busy weeknight when you want something satisfying without much fuss. The combination of tuna, sun-dried tomatoes, and a handful of fresh herbs creates a bright, savory sauce that clings to every strand of spaghetti.
Feel free to use any pasta you have on hand, and don't skimp on the herbs—the more variety, the better. It's a simple, no-fuss meal that tastes like you spent much more time on it.
Ingredients
Converted amounts are rounded.
Method
- In a large pot, bring plenty of salted water to a boil and cook the pasta for 1 minute less than the package instructions suggest.
- While the pasta is cooking, prepare the rest of the ingredients: finely chop the herbs, scallions, and sun-dried tomatoes.
- In a large non-stick skillet (or even the same pot you used for the pasta, to save on dishes), heat the olive oil and sauté the scallions until they soften.
- Add the tuna, lemon zest, and sun-dried tomatoes to the skillet, and stir well for 2 minutes.
- Add the fresh herbs, stir briefly, then add the cooked pasta, salt, and freshly ground pepper.
- Toss everything together until well combined, and serve immediately.
💡 Tips
- Reserve a cup of pasta water before draining; add a splash if the pasta seems dry.
- For extra flavor, use tuna packed in olive oil.
- Any short pasta like penne or fusilli works well too.
