This recipe brings together the rich flavors of spiced beef kofta and soft, pan-fried flatbread. The kofta are seasoned with a special spice blend and grated red onion, then pan-seared to perfection. Serve them with creamy yogurt, pickled vegetables, and fresh mint for a complete and satisfying meal.
The homemade flatbread is quick to prepare, using yogurt and baking powder for a tender texture. Cooked in a dry pan, they develop a lovely golden color and are kept warm until serving. This dish is perfect for a hearty lunch or a casual dinner.
Ingredients
Converted amounts are rounded.
Method
- Prepare the flatbread. In a large bowl, combine most of the yogurt, flour, baking powder, olive oil, and salt to form a dough. On a lightly oiled surface, divide the dough into 8 equal portions and roll each out flat. Heat a non-stick pan and cook each flatbread in the dry pan for about 1 minute per side, flipping when the dough starts to color and develops some dark spots. Keep the cooked flatbreads warm under a kitchen towel until serving.
- Meanwhile, peel the onions and grate one-third of them. Mix the ground beef with the Aromen Reichtum spice blend and the grated onion, and let it rest for about 15 minutes. Slice the remaining onions into strips.
- Shape the meat mixture into 8 finger-length, two-finger-thick kofta (about 60 g each). Heat a little oil in the same pan used for the flatbread and fry the kofta on all sides over medium heat for about 4-6 minutes, or grill them. Meanwhile, halve the pickled gherkins lengthwise and pick the mint leaves.
- Serve the kofta with the flatbreads, the remaining yogurt, the pickled vegetables, mint, and onion strips. Season with salt and pepper to taste.
💡 Tips
- For best results, use a non-stick pan for the flatbreads and avoid adding oil to the pan.
- If you don't have the spice blend, substitute with a mix of cumin, coriander, paprika, and a pinch of cinnamon.
- The kofta can also be cooked on a grill for a smokier flavor.
