When you're short on time but craving something cheesy and comforting, these quesadillas are the answer. They come together in a flash with a trio of cheeses, a hint of jalapeño heat, and fresh parsley.
Perfect for a quick lunch, a casual dinner, or even a party snack, these quesadillas are endlessly customizable. Serve them with your favorite sides like pico de gallo, sour cream, and black beans for a complete meal.
Method
- Melt 1/2 tablespoon of butter in a non-stick skillet over medium heat.
- Spread cream cheese on one side of each tortilla. Place one tortilla in the skillet, cream cheese side up.
- Layer the three grated cheeses evenly over the tortilla in the skillet. Sprinkle with parsley and jalapeño rounds. Top with a second tortilla, cream cheese side down.
- Cook until the bottom tortilla is golden brown, then carefully flip the quesadilla. Add another 1/2 tablespoon of butter to the skillet, and cook until the second side is golden. Repeat with the remaining tortillas and filling.
- Remove from the skillet, cut each quesadilla into wedges, and serve with pico de gallo, sour cream, and black beans on the side.
💡 Tips
- Use a non-stick skillet to prevent sticking and ensure easy flipping.
- Adjust the amount of jalapeño to your preferred spice level.
- Serve immediately for the best crispy texture.
