This dessert is all about creamy yogurt and sweet, juicy fruits. The strained yogurt is beaten with heavy cream until thick, then mixed with a fruity syrup and pieces of tropical fruit. It's then set in a bowl, chilled until firm, and turned out onto a plate.
To finish, the dessert is covered in whipped cream and decorated with fresh strawberries and chopped pistachios. The result is a luscious, creamy slice that's both satisfying and refreshing — perfect for warm days or when you want something sweet but not heavy.
Method
- Drain the canned fruit, keeping the fruit pieces aside. Pour the syrup into a small saucepan.
- Heat the saucepan over low heat until the syrup is warm. Once it starts to boil, add the pineapple jelly powder (if using; otherwise skip) and whisk until completely dissolved. Remove from heat and let cool for 5 minutes.
- In a large mixing bowl, combine the strained yogurt and heavy cream. Beat on high speed until the mixture thickens and becomes creamy.
- Gradually pour in the cooled syrup mixture while beating, until everything is well combined and smooth.
- Take the bowl off the mixer. Gently fold in the drained fruit pieces with a silicone spatula.
- Line a medium bowl with plastic wrap, making sure the wrap covers the entire inner surface. Pour the yogurt-fruit mixture into the bowl, smooth the top, and cover with another piece of plastic wrap.
- Refrigerate for 2-4 hours, until the dessert is fully set and chilled.
- Remove from the fridge. Take off the top plastic wrap, then invert the bowl onto a serving plate. Remove the bowl and carefully peel off the plastic wrap.
- Spread the whipped cream evenly over the entire surface of the dessert.
- Decorate with the chopped strawberries and chopped pistachios. Serve immediately.
💡 Tips
- For a firmer texture, let the dessert set overnight in the fridge.
- You can use any canned fruit you like — peach, mango, or a mix.
- If you don't have pineapple jelly powder, you can add 1 tablespoon of cornstarch dissolved in 2 tablespoons of water to thicken the syrup.
