This pasta recipe is a fantastic way to sneak more vegetables into your family's diet. The rich, homemade-style tomato sauce is packed with seven different veggies, making it both nutritious and delicious.
Paired with tender pasta shells and flaked tuna, it's a satisfying meal that comes together in no time. The hint of cinnamon adds a warm, aromatic touch that elevates the sauce, while the cottage cheese provides a creamy finish.
Ingredients
Converted amounts are rounded.
Method
- Bring a large pot of salted water to a boil and cook the pasta shells according to package instructions until al dente.
- While the pasta cooks, heat the olive oil in a skillet over medium heat and add the capers. Sauté for 1-2 minutes until fragrant.
- Pour in the 7-veg tomato sauce and bring to a gentle simmer. Season with the pinch of cinnamon and stir well.
- Drain the tuna and flake it into the sauce, stirring gently to combine. Let it heat through for a couple of minutes.
- Once the pasta is cooked, reserve a cup of pasta water, then drain the shells.
- Add the drained pasta to the sauce along with a splash of pasta water to loosen the sauce if needed. Toss everything together.
- Remove from heat, squeeze the juice of half the lemon over the pasta, and stir.
- Serve immediately, topping each portion with a tablespoon of cottage cheese and an extra squeeze of lemon if desired.
💡 Tips
- For extra protein, add a handful of cooked chickpeas or white beans.
- If you don't have 7-veg sauce, use a good quality tomato sauce and add grated carrot and zucchini.
- The cottage cheese can be replaced with Greek yogurt for a tangier flavor.
