Ultimate Beef Chili

This hearty beef chili is packed with ground beef, beans, and bold spices, making it the ultimate comfort food for game day or any cozy meal.

This chili recipe is all about big, bold flavors with minimal fuss. The combination of lean ground beef, a mix of chili powder and cumin, and the richness of beer and broth creates a deeply savory sauce that coats every tender bean and piece of meat.

Beans add heartiness, while the jalapeño and green pepper bring a fresh kick. Simmering everything together for nearly an hour allows the flavors to meld into a thick, satisfying bowl of pure comfort. Top with sharp cheddar, sliced scallions, or fresh cilantro for an extra layer of flavor.

Method

  1. In a large bowl, combine the ground beef with 1½ tablespoons of the chili powder. Mix well with your hands until evenly coated.
  2. Heat a large pot over medium-high heat. Add the seasoned beef, onion, jalapeño, and garlic. Cook, breaking the meat apart with a wooden spoon, until the beef is browned and the vegetables are softened, about 8–10 minutes. Drain any excess fat.
  3. Stir in the remaining 1 tablespoon chili powder, the cumin, and the green bell pepper. Cook for 1 minute until fragrant.
  4. Add the crushed tomatoes, drained kidney beans, diced tomatoes with their juices, beef broth, beer, tomato paste, and brown sugar (if using). Season with salt and black pepper. Stir well to combine.
  5. Bring the chili to a boil over high heat, then reduce the heat to low. Let it simmer uncovered for 45 to 60 minutes, stirring occasionally, until the chili thickens to your desired consistency.
  6. Taste and adjust seasoning if needed. Serve hot, topped with shredded cheddar cheese, sliced green onions, fresh cilantro, or your favorite toppings.

💡 Tips

  • For extra heat, leave the jalapeño seeds in or add a pinch of cayenne pepper.
  • This chili tastes even better the next day; make it ahead and reheat gently.
  • Freeze leftovers in airtight containers for up to 3 months.
